Orange Pomegranate Salad

The holidays are over along with tables full of beautiful festive food. While my body is craving clean, healthy raw food, my mind still is looking for beauty. Time for a festive salad! Oranges, pomegranate, pecans and greens topped with an orange chia seed dressing. Quick, festive and delicious!

    This looks just beautifully delicious! I want to make it for a dinner this weekend and am trying to figure out how much I need to make…there will be twelve at the dinner. How many portions does your recipe serve?

      Most recipes here normally serve 4. You can get a good estimate by looking at how many cups of ingredients are in the recipe and then figuring how big your servings would be.

    I made this for dinner last night and if I do say so myself it looked as lovely as your photo. Pomegranates are wonderful in salads. First time I used chia as well. Beautiful recipe and photo. Thanks

    So…can you eat the hard part of the pomegranite seeds, the “seed” part I guess you would say.

      Yes…you can eat them. They are a little bitter so I don’t crush them when I eat them.

    WOW! this looks really delicious, and colorful! i always feel the need to add lots of different colors to my food, otherwise i feel like my meal is incomplete!
