Raw Food Recipe: Banana Pecan Pancakes
When I was a little girl, every Sunday after church my family would go to breakfast at our local pancake restaurant. I still have those Sunday morning pancake cravings but no desire to eat traditional pancakes. For mother’s day, I decided to make create a raw food recipe for my favorite pancakes, banana pecan! They are amazingly filling, and will satisfy the desire for a special Sunday morning breakfast.
Banana Pecan Pancakes
SERVES 4
- 1 1/2 cup ground flax seed
- 1/2 cup flax seeds
- 1/2 cup dried, unsweetened coconut*
- 3/4 cup water
- 1/4 cup raw agave nectar or maple syrup
- 1/4 cup coconut butter
- 1 cup sliced bananas
- 3/4 cup chopped pecans
- Mix all ingredients together. You might want to get in there with your hands. Shape into pancake sized patties.
- Place on dehydrator shelf with screen. Dehydrate at 140 for 30 minutes, then 116 for another 30 minutes. These should still be moist.

These are seriously the best raw pancakes around! They are so good….I could see myself eating these every morning 🙂 Even my 2-year old said “can I have more raw pancakes please?” lol

Thank you again for some inspiration… It’s 9:44pm and I do have all of those ingredients at my fingertips, there is a part of me that wants to jump up and put on my apron, I really want to make them tonight… That is what happens when I check into rawmazing close to bed time… I think I will have to wait patiently and make them Saturday night, for Sunday Brunch!

AND, I left half the second batch in the dehydrator for 24 hours and they made a wonderful cookie! I see that this is a good basic recipe that I can add other ingredients to for various flavors of pancakes and/or cookies.

Just tried these last week to share at a raw food demonstration for non-raw young people. They loved them and are still talking about them. Since I only got one small piece of one, I now have a whole batch in the dehydrator just for me! I substituted raw honey for the sweetener.

Is this still raw, considering that you’re dehydrating at 140 degrees? I don’t know much about raw foods,
but I thought exposing foods to a little over 100 degrees F made them no longer raw…Have you ever dehydrated these pancakes at lower temperatures? If so, how long did it take?

HI there, I saw this question asked earlier.. would it be possible to put these in the oven for a bit at low temp?? We don’t have a dehydrator either.

A dehydrator works very differently than an oven. You would have to experiment with it and also know that you will most-likely compromise the raw status.

To warm up leftover pancakes, do you simply place them back into the dehydrator?

Oh, my goodness.
I miss pancakes and waffles sooooo much.
