Raw Food Recipe: Cacao Oat Goji Balls

School is back in session! A quick, healthy raw food recipe, that is easy to throw together, packs a big nutritional punch and requires no dehydrator provides quick after school snacks.

 

 

Goji berries are considered to be one of the most nutrient rich “super-foods” available. Goji berries have protein, healthy fat and fiber. They are also loaded with macro-nutrients and anti-oxidents! They contain 18 amino acids, 8 of which are essential aminos. They also have vitamin C (more than oranges), beta caroteen (more than carrots), and iron!

No dehydrator needed! You can mix these up fast and have them ready. Keep them in the fridge or freeze for later.

    I tried the water and, perhaps more importantly, because it still seemed to come apart in my hands, used two spoons to smush the balls together. It worked! Thanks very much.

    Add a little water, 1 tablespoon at a time, mix it in well by hand.

    Hi, Susan,
    The coconut oil was freshly melted, and it looked like raw oats. I got them out of a bulk-food bin at our local co-op, and I can go back and look at what the bin said. I’m thinking that it must have been the oats, because that’s the only ingredient that there’s any question about; the rest are pretty straightforward. Do you have any ideas about what else I can do with this? I hate to throw it all out. Thank you.
