The quantity of raw food required. So much produce is consumed so quickly! The preparation and organisation of meals as I have limited time during the week and have to plan ahead.

My biggest challenge with eating raw is having portable raw food to eat while away from home. I’m in nursing school and like to pack my lunch for class and clinical days. It would be great if I could get a variety of recipes for people on the go.

My biggest challenge is using up the beautiful produce while still fresh! I try not to buy a lot, but everything looks great, and I read so many recipes, I think that I should bring home all of the ingredients, from all of the recipes!

Maintaining a low fat raw vegan diet is easy most of the time……once I learned to eat sufficient quantities of fruit. Occasionally, I have cravings in the late evening that are asking for more fat or sometimes for dense carbs….jusually just a bite or two of a raw dessert does the job.

The hardest part about staying raw is when eating with or at family’s house. Especially when I travel for the holiday and can’t take my vitamix. Taking the bullet with me would be awesome!!!

I’m slowly leaning towards more raw food/less cooked, my biggest challenge so far is coming up with different meals, but books from the library and raw food websites definitely help out! A Nutribullet would be handy for all the smoothies.
