Zucchini Cucumber Hummus
You may have noticed that I have been a bit fixated with flat breads lately. I am on a creative raw food recipe bender. Every morning I get up and another idea pops into my head and I just have to try it! The breads are dense. They have a ton of nutrients but they are not always fun to eat alone. There are many nut spreads that could be used on them but in an effort to lighten things up, I decided to made a spread to go with the breads that would not only nourish but add a light touch with a lot of flavor.
Zucchini Cucumber Hummus
MAKES 3 CUPS
- 2 large zucchinis, chopped (about 4 cups)
- 1/2 cucumber, diced
- 1 cup tahini
- 1 lemon, juice from
- 1 clove garlic
- pinch of salt
- pinch of pepper
- Place all ingredients in food processor and process until well blended. This is great with veggies, or as a spread on flat bread.

This sounds really good. Can it be stored or does it need to be consumed right away? I like to make hummus and eat it with veggies for lunch. This would be a great recipe to add to my collection of raw hummus recipes.

I made it and added some cilantro into the chopped up mix and it was really flavorful.
Also – I made mine in the Vita Mix b/c my food processor is broken – and it wound up turning into more of a dressing style thing which is really great on flax crackers with sprouts and tomatoes…
And I imagine it’d be great on a salad as a dressing too.
I think I’m going to like it when I replace my food processor part and it stays a little chunky instead of super blended up in the Vita Mix.
Have you tried adding other things for different flavors? Roasted pepper or sun dried tomato or anything like that?
