    I am convinced that plant-based diets with an emphasis on “raw” is the healthiest way to eat, but I don’t know how to make it work with my hectic schedule. I am a special education teacher who works long hours & deals with stress as part of my daily routine. If I could make healthy eating work for me, I feel like I could not only affect my family, but possibly offer classes/support for others who are also struggling with trying to eat healthy in our frenzied world. I’d really love it if I could teach healthy eating to younger children! Thanks for offering this opportunity 🙂

    We run a raw vegan farm stay and health retreat. And we keep making the same delicious meals over and over. We need to broaden our variety.     At 61, I am truly embracing food as medicine more and more. I have learned a lot about food and health during my life by going through my own personal health challenges and discovering many things along the way. I believe wholeheartedly in the body’s innate wisdom and ability to heal. I have raised a garden every year for the past several decades and derive great pleasure from growing my own delicious fruits and vegetables. I love to cook and share meals with friends and family. As I continue my journey toward wholeness and wellness, I look forward to better and better health as I age. I have enjoyed reading the comments from like-minded folks on this thread. Taking this course would be a great opportunity to learn more about plant based cooking for anyone who is fortunate enough to receive it.     I have just started building my blog devoted to personal loss and subsequent weight gain. I have been on a mostly plant based diet for over eight weeks now, with over 3 weeks on a fully raw diet. I lost over 20 pounds on a plant based diet, Fuhrman’s Eat to Live, four years ago but I went back to a SAD diet and gained all the weight and more back. My depression, that I had battled for years returned. However, after only 1 week on the fully raw diet, my depression completely faded. I feel like I have reemerged from a long dark winter and am ready to take on this unexpected life, to thrive despite all of the loss of personal relationships and the weight gain that has demolished my self esteem. Moreover, I love to cook and have worked as a freelance chef on private yachts. I desperately want to do the Rouxbe course but cannot possibly afford it right now a single parent of 3 small children. Please please please pick me universe so that I can continue my healthy lifestyle and share this way of eating and living and overcoming loss with the world.

    when i first read about rouxbe on the wonderful rawmazing site i thought it would be a dream come true to take this course. being a creature of habit i tend to make the same meals over and over again. learning some new techniques, ingredients and combinations would surely boost my repertoire. my fingers are crossed!

    I must say this would be an amazing adventure for me and my family would benefit from it as well. I lost my mom to breast cancer last year and I truly believe that the chemo killed her not the cancer. I have been trying to become vegan and raw ever since this tragedy but have lost my way . I really believe that almost all disease comes from the food we put in our bodies. I don’t want to leave this earth the way my poor mom did she was a soldier all the way to the end miss her more everyday and want to be healthy and happy again. Thank you for this opportunity .     I would love to do this! Plant based cooking is awesome. Also, I’ve seen photos of yours and others coming out of this course and it’s stunning :).

    I’d like to do this class to learn more about and go further with my plant based cooking (and uncooking). I’ve been vegan for about 8 years and writing about food for about 6 and both are the best things that have ever happened to me. Being able to show others how to make healthy, humane plant based food is a blessing and what I feel is a “right livelihood” that I always feel good about.

    As a Licensed Acupuncturist, I have been challenged by something I never saw coming. A public that needs so much help to get fit. They don’t want to cook, they know nothing about growing, gardening, creating energy and sustaining the planet. I realized my calling involved so much more than just putting pins in people. But how would I tackle this? I’d have to start with my own education. I’ve been cooking for myself for years. I started reading food labels. Burning questions arose and my inner passion surfaced more as a cook than as a pin pusher.
    Why do carbs matter?
    As I scan the nutrition labels of a few carb products I have thoughts. Looking at Angel Hair Pasta vs Couscous vs a Black Long Whole Grain Rice.
    The most outstanding difference is only a few grams of Fiber, 3-4g. The Carb and Protein amounts are all about the same, around 30g Carb and only around 5-7g Protein. This is interesting. Why does this matter?
    Without fiber, there’s a higher glycemic index. But it’s fiber that saves the day.
    So where would you get more fiber? Vegetables and fruits…plants! You will also get carbohydrates with a lower glycemic load. The more I cook a plant based diet, the loader my visceral calling gets. I am developing a relationship with plant foods based on memory of taste and smell. It gets easier every day to imagine what to eat, how to cook it and how it will taste. Spices are indeed the next step up in this ladder to health.
    This is extremely important in this society of meal skipping, high blood sugar, white flour eating folks.
    The more I can play a role in helping folks understand the wonder of vegetables and get back to basics the better I feel as a contributor to a healthier society.
