Oats

There has been a lot of interesting discussion lately about a recipe that I posted using the wonderful raw oats and raw oat flour that I have come to love. I find that using oat flour can be a wonderful alternative to nuts both for people who have nut allergies and if you just want to lighten things up a little. They give me an opportunity to really stretch when making raw food recipes and I love the health benefits that they provide.

Oats contain a specific fiber that has been shown to decrease cholesterol levels. Consuming just 3 oz of this fiber can lower your cholesterol by 8-23% which in turn reduces the risk of developing heart disease. Oats also have unique antioxidants called avenanthramides, which help prevent free radicals from damaging your good cholesterol. They are very high in fiber and also provide many other health benefits.

They enhance immune response to infection, stabilize blood sugar and lower your risk for type 2 diabetes and help prevent breast cancer.

You can find certified gluten free oats online. Personally, I don’t have to worry about the gluten free part, so I don’t need my oats to be certified. But, I do want good organic oats. You can order oats or if you are really into it, like I am, you can buy your own Mill and Oat Flaker from our friends at Sunrise Flour Mill. Let then know you found them here and they will give you a discount. They also sell a Flaker that is considerably less. You can make all kinds of flour and flaked grains with this mill. I see you will be making “Roasted Tomato Soup” in your class. How do roasted and raw merge in this recipe? It sounds like I will have to attend to find out.

I’m still confused about flour. I contacted the company you suggested…so if I buy oat flouris that raw. I still don’t know what to buy? Wish I could do you cooking class….but I’m in Salt Lake. I still want to make those chocolate chip cookies….they really look wonderful. You are an inspiration to me and I am trying to go 97% raw.

    Thanks Jackie

Just ask them for the unprocessed oat flour. Did you tell them that you came from my site? They know what I use. 🙂

Are these oats the same as oat groats?

The raw flaked oats and raw oat flour are made from oat groats. The consistency changes considerably.
