Strawberry Vegan Cream Avocado Pie

What do you do when you have a refrigerator full of avocados that are ripe and ready to go? Make a raw avocado pie, of course! And what goes great with avocado? Strawberries!! You know me, I can’t leave well enough alone so I couldn’t stop with just the avocado pie. I simply had to add a strawberry cream topping with a little ganache to finish it off. The result is a delightfully paired trio…avocado, strawberries and chocolate. Another raw food dessert recipe for your collection!

I am making this right now and it looks soooo delicious! Tips: I used honey instead of agave and it worked out. I left the topping in fridge overnight, but now its too hard and the consistency of it is not soft enough for me to put strawberries in…I will leave it on the counter for a bit and see if it softens. Hopefully I will still get a great result!

This sounds amazing! It is funny, because my Mom was just telling me I should make a raw strawberry avocado cheesecake. I should show her this ;)!

So many yummy recipes call for cashews but it seems my son is allergic to them. Do you have another suggestion as a substitute for cashews? Thanks!
