Eggplant No Fry Veggie Fries!

Who says “fries” have to be deep-fried potatoes? These raw eggplant veggie fries are super simple and so delicious. A quick chop and  soak in the marinade and away you go! I made these in my dehydrator but you can certainly experiment with your oven. Just note if you really want them raw the food temperature needs to stay under 115 degrees. Also, ovens do function differently than dehydrators so keep an eye on them if you choose to go that route.

They would make a great side for Raw Mushroom Burgers!

Just a quick note: My favorite mandoline (for slicing) is the Benriner Mandoline . It makes slicing eggplants and other veggies a breeze and is inexpensive. I have seen Benriners used in the top kitchens in the US.

    These were terrific I had them last year wth my “burger” so I’m revisiting the recipie to make again, I now have an x cal. Dehydrator so it will probably be more fun than my thrift store mr chef. However if your just starting a thrift store mr chef will work fine for a year.
    Hey! I need a good “bun” recipe anyone know of a link? I have bad luck with crackers in the dehydrator, my toilet paper cardboard rolls have more flavor, but I must cut back using those tp cardboard it dosnt seem to digest well.

    I’m new to your site, but not to raw… I must say, your recipes are truly amazing and by far the best raw food site I’ve come upon. I moved from Los Angeles to El Paso and making recipes from your collection are better than going to my favorite raw restaurants in LA! Thanks so much for sharing… how totally rawsome of you 🙂

    Hanan, Chipotle powder is actually a smoked red jalapeno. If you were to smoke it, dry it, and grind it to a powder – that is what you get. A very suitable alternative for similar flavor is to used smoked Spanish paprika, hot or sweet depending on your love for spice. The flavor profile is so very similar, that most people would not be able to tell.

      You can buy chipotle powder in the spice section. I often use both chipotle and smoked paprika.
