Raw Cacao Walnut Fudge

Fudge. Easy, decadent, satisfying, raw? You bet. Traditional fudge is made from lots of sugar (the recipe I had called for 2 and 1/2 cups!), butter, evaporated milk, and usually semi sweet chocolate, which is loaded with more sugar and fat. This raw food recipe is quick and only contains almonds, cacao powder and a little agave. I threw in walnuts because they have a ton of their own health benefits (see here) and I love chocolate and walnuts.

    Hi Susan

These look wonderful and so romantic – I am going to make them for my husband and son. I do have a question though – Are the almonds raw, and do you soak them? If so, for how long? Thanks – xania

Yes they are “raw” meaning not toasted. And for this almond butter, because of time constraints, I did not soak and dehydrate them. But you can use soaked almonds, just make sure you dehydrate them so they are dry. You do not want wet nuts for this.

I made this fudge for my wife last night. I was going to wait until Valentine’s Day, but it looked too good…it was awesome!! And who knew that all I needed to make almond butter was my food processor? I’ve been paying ten bucks a jar for that stuff!

I’m glad I found this site. I’m looking to purify my food, and eating raw where possible seems like a great idea. Thanks for all the hard work you’ve obviously put into this site.

I just made this and can’t wait for it to cool! I don’t have molds but have some little heart-shaped metal cookie cutters that might do the trick. Thanks again for all your recipes–the ones I’ve tried have all been winners.
