Raw Cacao Walnut Fudge
Fudge. Easy, decadent, satisfying, raw? You bet. Traditional fudge is made from lots of sugar (the recipe I had called for 2 and 1/2 cups!), butter, evaporated milk, and usually semi sweet chocolate, which is loaded with more sugar and fat. This raw food recipe is quick and only contains almonds, cacao powder and a little agave. I threw in walnuts because they have a ton of their own health benefits (see here) and I love chocolate and walnuts.

Cacao Walnut Fudge
- 1 cup Almond Butter (LINK RECIPE)
- 1/2 cup Cacao Powder
- 1/4 cup Agave
- 1/2 cup Walnuts, chopped.
- Mix together almond butter, cacao powder and agave. It is easiest to to this with your hand. Once it is well combined, mix in the walnuts.
- You can put this in an 8 x 8 sq pan or, use a mold. I used a little heart silicone one that I picked up one day.
- Refrigerate for at least 2 hours.

I just made this for my sweetie! I just happened to have heart shaped ice trays, so I got the benefit of being nourishing and romantic! They were awesome!

She is such a sweet turtle. I am glad you like the Baba Ganoush. It is one of my favorites, too. I have tons of frozen eggplant in the freezer. I think I will make it tomorrow!!

I’m learning so much from your site! I really love your new Raw Challenge 21 “mini-blog” on this site! My healthy pantry is slowly growing. I’ve even finally used my “garage sale” food processor (a $3.00 find!!) for some of your great recipes. Garage sales don’t start again till spring so I just had to order some hard-to-find items from your store. I can’t wait to receive my Large Spiral Slicer,Nut Milk Bag, and most importantly the Evert Fresh Green Bags…my veggies sometimes age way too fast in my fridge ;(

yum! I love the heart mold, that’s a great idea. I make a layered version of this with coconut butter & coc. oil added to the chocolate part – that’s the middle, then the bottom is chopped dates & nuts, with a topping of shredded coconut and agave. I use a ton of cacao powder so it’s really deep and dark fudge.
Thanks for the tip on taking the almonds all the way to butter in the food processor, I actually didn’t know you could get that consistency without a champion juicer or special machine. That’s what was missing in my fudge – the creamier texture, I always had a fine grittiness from the nuts. Do you use almonds that have already been soaked and dehydrated? Do you have a good source for non-pasturized raw almonds?

I get them at our coop. I will have to ask how they can sell them but they do. I would suggest looking online.
