Simple Raw, Vegan Carrot Ribbons with Creamy Cumin, Lime and Ginger Dressing

At this time of year, I want super easy, raw, vegan dishes that burst with summer flavors! I have no desire to be nesting in the kitchen or dealing with heavy textures or flavors. Salads like this are the best answer. Shave some carrots with your peeler, throw the dressing ingredients in your blender and in minutes, you have a delicious salad worthy of your best company.

I love the flavors in this one. Carrots love cumin which loves ginger, lime and garlic! Some scallions and parsley (or cilantro) finish the salad off beautifully and add that pop of flavor that I love so much.

    I was afraid to try this as I have had a few fails with cashew based sauces before so…. Since I am not 100% raw, I thought I would try these flavors with Greek yogurt (dairy is a habit I love but I’m trying to break), but at the last moment I stayed strong and ran to the store for cashews to soak. This was so simple to make and the flavors were incredibly fresh. I ended up stuffing some butter lettuce and turned it into wraps. I look forward to possibly not adding as much water and using it as a dip for veggies at my next get together. Thank you again for another fantastic meal!

    My boys and I made this for dinner last night. My oldest (7) enjoyed peeling carrots and my youngest (3) had a blast helping me make the dressing. We all enjoyed it immensely, and the boys even asked for seconds! Thank you so much for sharing!!
